One-Bowl Pumpkin Bread, veganf

5 tbsp. marjarine (I use Earth Balance Buttery Sticks)
3/4 cup brown sugar (I use Hain Organic)
1/2 tsp. vanilla
3 tbsp. rice or soy milk (or water if you'd rather)
2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon
1/8-1/4 tsp. ground allspice
1/8-1/4 tsp. ground nutmeg
2 cups steamed pumpkin chunks
1/2 cup walnuts
1/2 tsp. cane sugar (optional, for garnish)

Melt marjarine until soft. Add brown sugar and stir well (I usually use a fork). Add vanilla and rice milk and stir. Pour in flour, baking powder, baking soda, and spices. Stir. Mash pumpkin and add to bowl with walnuts. Mix well. Pour in greased bread pan (I just use spray olive oil). Sprinkle top with cane sugar. Baking 50 minutes in 350F oven. Allow to cool ten minutes before removing from pan.

I hope this works, as I never really measure ingredients in my own recipes. Let me know if something seems off, but I tried to approximate the best I could what I normally do.
