RECIPE:Smokey Black Bean Chili w/ Sweet Taters Can't Post - Sign Up!

This was something that I just made up this last weekend, when preparing freezer ready made meals for a friend who is going in for breast cancer surgery. I don't know if it was the love involved or just sheer luck, but I have been honing my black bean chili recipe for years and have really hit the spot with this one. One large tuppie was set aside for my roomie, my boss and my nextdoor neighbor who all raved and asked for more. So I will share it all of you!!

5 cans organic black beans, regular sized can - keeping two cans worth of bean juice and rinsing the other three cans
2 medium sweet potatoes/taters, cubed into 1/4" to 1/3" size chunks
1 large yellow onion, diced
6-8 cloves garlic, crushed and minced
1 tbsp ground cumin
1 1/2 tsp ground chipotle powder
1 tsp epazote (optional, but very important for digestion)
1 can fire roasted organic tomatoes, diced or pureed
salt & pepper to taste

Makes 8 - 10 servings, perfect for the freezer or gatherings (non-veggies don't even care that its vegan!)

In a dutch oven (preferrably cast iron) or stock pot, sautee yellow onion until soft. Rinse three cans of the beans of all bean juice, and add to onions along with two cans of beans and their liquid. Add epazote, can of tomatoes, adding just enough water to cover the beans. Simmer for two to three hours in the oven if you have a dutch oven or watch it carefully if in a stock pot. When the chili is consistant dark brown/black and some of the beans are disintegrating. Add garlic, cumin, chipotle, salt and pepper and sweet taters. Do not add the sweet taters before otherwise they will turn to mush and will be unidentifiable. Simmer this business for about 20 minutes or until the taters are soft and serve in a soup bowl over a thick slab of cornbread or pile of brown rice!

This isn't a really spicy recipe if you add the chipotle in early and the epazote can be found at your nearest Mexican Specialty food store. The epazote really gives it this earthy flavor that is so subtle and hard to describe but it will kill most of the noxious fumes that most of us experience the beanage.

Re: the ground chipotle powder and epazote. I don't think I've ever seen chipotle powder, though I've seen some kind of chipotle sauce in a jar. Is it that much different from regular chili powder, if I put a drop of liquid smoke?
I thought it might change it too much. If it's that much different, I'll get some one day when I get to the city. I mean, heck, if you've been tweaking this recipe for a long time, I figured I should try it. That's something that attracts me to a recipe rather than something tried once.

Epazote...I guess I could google this - never heard of it.

Chipotle powder is smoky and spicy. Very delicious. I'm certain you could use the chipotle sauce in a jar (the kind I have is Tabasco brand). Using regular chili powder and some liquid smoke may do the trick, too. Fringy, I can get chipotle powder here if you would like for me to send you a jar to try out.

You may be remembering when I first joined VP; I used to whine a lot how I lived in the middle of nowhere, and couldn't get to try all the new neat stuff people would talk about.

But now I'm only about 4 hours away from Vancouver, (BIG city!) and only 1 hour from a city of 88 thousand, that's getting pretty sophisticated these days...much easier than you dealing with mailing! But oh wow, how sweet of you to make that offer! ((((hugs!))))

  I agree with dragonfly - chipotle sauce should do the trick. I can find canned chipotle peppers in adobo sauce almost everywhere (if your grocery has a "mexican" section, or if you have a mexican/latin american grocery, should be especially easy to find) or I bet you could find dried chipotle and grind it to powder. OR if you have a smoker and can find a red jalapeno, smoke it and voila! You have a chipotle! (I think)

Epazote is a mexican herb or ground leaf or something that is good for reducing beany gas. You can do the same thing with kombu, but for a chili might be sort of funny tasting, though the kombu taste would likely be smothered by the chipotle and other tastes.

Yes, this is what I was thinking of! Isn't it nice to live closer to a big city? I used to have to drive an hour or longer just to get to my favorite stores and since I've moved all of those places are only a 30 minute drive at the most. I think it's great. Mr. Dragonfly doesn't think it's so great because I end up spending more money more often now! Sly

We used to save up chores and cluster appointments, then start out at 5 or 6:00 am. On the way, we'd tweak the route list; which businesses opened first /closed last, and where did they fit enroute and between appointments. If say, we'd brought in something for repair, as often happened with our stupid p.o.s. computer, we'd have to stay overnight in the van. We might take in a movie, or read in the van. Once we had a mechanic appointment and took knapsacks and bicycles. Ugh.

Of course we just couldn't wait to get home and take a shower. I hated the rush, but at least when we got home, and it was always dark - we could see the stars really well, and it was nice and quiet and it smelled good. Guess everything has it's price.

I am making this right now. It smells heavenly. I made some changes, though. Because I grew my own sweet potatoes this year I have a mountain of them in the pantry. But none of them are cooked. So I added them to the soup uncooked at the same time as the beans along with the seasonings. There it will simmer until I decide it's done. Also, I don't have canned beans. I cook up dried beans and never keep any of the liquid. SO - what I did was use beer in place of the bean liquid. And I didn't have the fire roasted tomatoes that would have been *perfect* for this soup, so I just used plain old canned diced tomatoes. And I don't have epazote. Never had a need for it, but I may buy some on my next trip to Whole Foods so I can see what the difference in taste is with it added to the soup. I can't guarantee that Firefly will like it, but I think it's going to be delicious. I will let you know how it turns out!

Edit: It was delicious! Turned out awesome! My husband loved it. And, as predicted, Firefly despised it, and even made her snarky little comments about what was in it and asked why it tasted disgusting. But, what else can you expect from a teenager (or, at least, *my* teenager?). Unimpressed

How are you storing your sweet potatoes?

I grew white ones a few years ago and storage was a problem. Eventually I ended up cooking and freezing them.

Just in a box in the pantry and in the basement, where it's nice and cool. The same way I store squash. I grew beauregard sweet potatoes this year. Maybe there's a difference between the white and the red ones and how well they store?

That's how I stored mine. Maybe it is a difference in the variety. Maybe I'll try the orange ones next time.

Sorry, I never got the notification that you responded to my post!!

You can find chipotle peppers in cans with adobo, in the Mexican specailty food items at any grocery store. You can use one or two per batch of beans and toss the rest in a ziploc for a later day. The ziplock should thick but it will hold well and then freeze them. I never get through all the peppers at once, so this has been a trick I have used.

Chipotles are smoked jalapenos, which are hot and spicey but have this incredible smokiness that is out of this world!

Oh that is wonderful!! I was never notified about this post, so I apologize for the late reply.

This recipe has been in the making for years and I find that epazote is not essential but really does the trick. It can be really hard to find though. The last place I could find it was at a Tamales shop at Pike Place Market and then, I had to plead them for it. When they do get a fresh batch in, they hide it behind the counter so the local restaurants won't come and buy them out. Sly You might want to try it next time! It gives it this earthy smell that is so hard to describe and it kills the gas for me. Miraculous, if you ask me!!

Epazote is just an amazing herb that I can't cook my black beans without. The first time I ever heard of it was when I was working in a specialty plant nursery in San Diego. It came in as a special order and I had never heard of it before. So, when I came up here I found a recipe that called for it. These people had it for reasonable, but I would only buy a small bag. It takes about two pinches per batch of beans, especially if its fresh. Doesn't smell like much but wow, does it kill the beanee gas!

Its funny because the first time I found it at the Tamales shop at Pike Place Market, I was beside myself. The woman behind the counter, wouldn't answer me when I first asked her for it. She waited until the two other customers in the shop had left, then she quizzed me on how I use it. Sly After a thorough inspection, she slipped a small bag across the counter and charged me $6 telling me not to tell anyone. It was their private stock, and they didn't want the local restaurants finding out because they would want to buy them out. That was 7 years ago and since them its been hit and miss, if they have it. I wonder why its so hard to find, because its just amazing. Oh well, I will always have my "herb deal" to make me smile when I make my frijoles!

I made this last night for my brother and his wife and I didn't have any black beans. I used kidney beans instead and it was good - not as good as the black beans, but the kidney beans were an acceptable substitute and they loved it. I'm going to email them the recipe so they can make it at home and taste how much better it is with the black beans. We also had a smokey chipotle cornbread with it, too. Perfect partner! And for dessert we had a gingered pear crisp, which was a nice, cooling, refreshing taste after a smokey and somewhat spicy (I like to add more chipotle powder than called for) dinner. Just thought I'd share.
