Black Bean and Orange Hummus

Black Bean and Orange Hummus adapted from Dreena Burton's "Eat Drink and Be Vegan"
2.5 cups cooked black beans 1/4 cup orange juice 2 1/2 Tbsp almond butter 1 large clove garlic, sliced 1 Tbsp olive oil 3 Tbsp red wine vinegar 3/4 tsp salt 1/2 tsp ground cumin 1 tsp ground coriander 1/4 cup fresh parsley 1 tsp orange zest fresh ground black pepper, to taste 1-2 Tbsp fresh parsley, chopped for garnish
Puree all ingredients together (except the garnish parsley) in a food processor.
I didn't have parsley when I made this, so I skipped it. I also think you'd be fine with another mild vinegar if you don't have red wine. But I'm not an expert on these things, so use your own judgment! View this orginal post in Vegan-Vegetarian Recipe discussion board
